I talk a lot on this blog about eating low carb but I also talk a lot about dropping the diets and eating what feels good to you.

Eating low carb isn’t necessary! You don’t HAVE TO eat low carb if you don’t want to. I don’t eat low carb because someone said I should. I eat low carb because it feels the best for my body.

  • Fat fills me up and keeps me full
  • I love the way healthy fats taste
  • I don’t get any crazy cravings
  • I love the foods I get to eat
  • My hormones are balanced
  • I have more energy

When I was “dieting,” I didn’t eat foods like these Chocolate Coconut Butter Cups. These kinds of foods were off limits on any diet I ever did, because any diet I ever did said I couldn’t eat much fat! It was all protein, veg, and carb. Pretty boring if you ask me.

These little chocolate coconut butter cups are the perfect little fatty treat when you need a little something.

I had no idea what coconut butter was until I started eating low carb. And I’m so glad I did because it’s one of my favourite ways to enjoy coconut. Combine it with chocolate and you’ve got a winning combination.

These cups are so easy to make, there are zero skills required. All you need are some silicone baking cups to make your job easier, but you could use paper muffin cups or a silicone muffin pan. The only difficult part is waiting for these little suckers to freeze, because you just want to eat them!

I’ll often have these as an evening snack if I’m a little hungry before bed or a quick afternoon snack if I need a little chocolate fix. I keep a bag of these in my freezer at all times!

Chocolate Coconut Butter Cups
A simple yet delicious way to enjoy chocolate and coconut butter.

Instructions
  1. Melt chocolate chips in a double broiler or microwave.
  2. Spoon 1 Tbsp of chocolate into each silicone baking cup, using your spoon to spread out. Place cups in fridge for 10 minutes to set.
  3. Remove chocolate cups from fridge and place 2 tsp of melted coconut butter on top of chocolate layer. Place cups in fridge for 10 minutes to set.
  4. Remove cups from fridge and place a thin layer of chocolate on top of coconut butter. Place cups in fridge for another 10 minutes to set.
  5. Remove chocolate cups from baking cups and store in a plastic zipper-closure bag in the freezer. When you want a chocolate coconut butter cup, allow one to thaw 5 minutes before eating!
