Are you familiar with Costco cookies? When I go to Costco, I’ll sometimes buy the cookies that Costco sells in their bakery. I love that there are three different flavours in one box – chocolate chip, double chocolate, and white chocolate macadamia nut.
My youngest son and I LOVE white chocolate macadamia nut cookies, but my husband and other two boys prefer the chocolate chip cookies. So whenever I buy the Costco cookies, the white chocolate macadamia nut cookies are the last to get eaten.
I wanted to make some cookies the other day and I was trying to decide which kind to make. I always have macadamia nuts in the pantry since I love making my own nut milk (macadamia nut milk tastes awesome!) I also just happened to find a bag of white chocolate chips in the pantry.
Then I remembered how much my son and I love the Costco white chocolate macadamia nut cookies! So I thought, why not make my own – but a healthier version?!
And that’s how my healthy white chocolate macadamia nut cookies were created.
Rather than using white flour and white sugar, I decided to use whole wheat flour and coconut sugar. I thought the coconut sugar would give these a really nice, deep flavour – and it did!
These cookies so soft and taste amazing! These are now one of my favourite cookies to make. The kids love them too, and since my husband doesn’t eat them, there are more for us
- 2cups whole wheat flour
- 1-1/2tsp baking powder
- 1/2tsp sea salt
- 1cup coconut sugar
- 3Tbsp unsalted buttermelted
- 2 egg whites
- 2Tbsp milk
- 2tsp vanilla extract
- 1/4cup white chocolate chips
- 1/4cup macadamia nutschopped

In a medium bowl, stir together the flour, baking powder, salt, and coconut sugar.

In a separate bowl, whisk together the butter, egg white, milk, and vanilla extract.

Add the dry ingredients to the wet ingredients and stir just until combined (I used my hands to mix everything together.) Stir in the white chocolate chips and macadamia nuts.

Chill the dough for 30 minutes in the fridge.

Preheat oven to 350F and line 2 baking sheets with parchment paper.

Roll dough into 1-1/2 inch balls and place on cookie sheets. Flatten cookies a little with your hands (they won't spread much during baking.) Bake cookies for 10 minutes, rotating pans halfway through baking. Remove from oven and let cool.
