Low Carb Spinach Gratin

Ingredients
Instructions
  1. Preheat oven to 400F. Spray a casserole dish with coconut or avocado oil and set aside.
  2. In a skillet, melt butter over medium heat. Add onion and cook for 3 - 4 minutes, until onion is translucent. Add garlic and cook an additional minute.
  3. Add flour, stirring constantly for one minute. Add cream and salt and stur until combined. Bring liquid to a light boil, then reduce heat to low and simmer for 5 minutes, stirring constantly to prevent burning.
  4. Squeeze and much liquid as possible from the spinach and add to the cream sauce. Add the Parmesan cheese and and pepper and stir until completely combined.
  5. Transfer spinach mixture to prepared casserole dish and sprinkle with cheese.
  6. Bake for 25 minutes, until cheese is golden and bubbly.
