Peach and Brie Quesasillas with Honey Drizzle

Ingredients
- 4 large whole wheat tortillasuse brown rice tortillas to make this gluten-free
- 3 peachessliced
- 1/2 red onionsliced
- 1tsp coconut oilor olive oil
- 1/2 small round of low-fat Briesliced into thin wedges
- thyme
- honey
Instructions

Heat a skillet over medium-high heat. Add coconut oil and let melt. Add onion and turn down heat to medium-low. Saute onion until brown and caramelized, about 15 minutes. Remove onion from skillet.

In the same skillet, add peaches and saute over medium heat for 3 minutes, until peaches have softened. Add a sprinkle of thyme and stir. Remove peaches from skillet.

Wipe out skillet with a paper towel. Spray skillet with olive oil mister and heat on medium heat. Place a tortilla in the skillet and add some Brie, onion, and peaches to one side of the tortilla. Fold the other 1/2 of the tortilla over and cook until golden brown. Carefully flip over tortilla and brown the other side. Remove quesadilla from pan and repeat process with the remaining tortillas.

Slice quesadillas into wedges, drizzle with a little honey, and serve.
