Grilled Chicken and Pineapple Quesadillas

Ingredients
- 4 large whole wheat tortillas
- 1/2 of a large pineapplepeeled and sliced
- 2 - 4oz boneless skinless chicken breasts
- salt and pepper
- 3Tbsp BBQ sauce
- 1cup light Tex-Mex shredded cheese
- 1/2 jalapenosliced (optional)
- Cilantro
- non-fat plain Greek yogurt
Instructions

Heat BBQ grill to medium heat.

Season chicken with salt and pepper. Grill chicken and pineapple slices until chicken is done, approximately 18 - 20 minutes. While chicken is grilling, brush with BBQ sauce. (You may have to remove the pineapple earlier than the chicken if it's starting to dry out.)

Remove chicken and pineapple from grill. Chop pineapple and slice chicken.

Place 4 tortillas on grill. Sprinkle a little bit of cheese on one side of each tortilla. Top with chicken, pineapple, jalapeno (if using), cilantro, and a little more BBQ sauce. Sprinkle with some more cheese and fold over other half of tortilla. Grill for approximately 3 - 5 minutes, carefully flip over and grill the other side.

Remove quesadillas from grill, slice, and serve with Greek yogurt for dipping.
Recipe Notes
If you don't want to grill your tortillas, you can bake them in the oven. Preheat oven to 400F. Spray a baking sheet with non-stick spray. Place 2 tortillas on the baking sheet. Top with chicken, pineapple, jalapeno, cilantro, BBQ sauce, and cheese. Place remaining two tortillas on top and spray with cooking spray. Place in the oven, and bake for approximately 10 minutes, or until tortillas begins to brown.
