Chicken and Peach Quesadillas

Ingredients
- 4 Whole wheat tortillasmy favorite is Ezekiel sprouted grain
- 8oz boneless skinless chicken breast cooked and shredded
- 1Tbsp coconut oil
- 1 yellow onionthinly sliced
- 1/2tsp chili powder
- juice of 1 lime
- 1cup diced fresh peaches
- 1 red pepperchopped
- chopped cilantro
- 1cup light Tex-Mex shredded cheese
Instructions

In a skillet, melt coconut oil over medium-high heat. Add onion and cook over medium-low heat until onions are golden brown and caramelized (approximately 20 minutes). Remove onions and set aside.

In a bowl, season chicken with chili powder and lime juice. Toss.

Spray the skillet with olive oil spray and heat over medium heat. On half of each tortilla, place equal amounts of chicken, onion, bell pepper, peaches, cilantro, and cheese. Fold tortilla in half and cook in skillet for approximately 5 minutes per side, or until golden brown and cheese is melted.
