This low carb, Paleo Flax bread is so easy to make, you’ll have it all the time!

One of the things I was concerned about when starting to eat lower carb was decreased fibre intake.
It’s easy to get in enough fibre when you’re eating whole grains, but when you take out whole grains and opt for eating lower carb, sometimes fibre can be lacking.
However, I have found easy ways to add more fibre into my diet, and sometimes that involves flax!
Flaxseed is a wonderful source of fibre, not to mention it’s other benefits:
- High in fibre but low in carbs
- High in Omega-3 fatty acids
- Helps make skin and hair healthy
- Helps lower cholesterol
- High in antioxidants
- Supports digestive health
- Helps decrease menopausal and hormonal imbalance symptoms
I use this flax bread for anything…
- Toast
- Sandwiches
- Croutons
You can also top it with anything, my favourite being butter, smashed avocado, or sunflower seed butter.
It takes just a couple of minutes to put it together, then put it in your oven and let it bake. You’ll end up with a delicious and moist flax bread you can use in place of regular bread.
- 2cups ground flaxmeal
- 1tsp baking soda
- 1/2tsp sea salt
- 4large eggs
- 1/2cup water
- 1/3cup olive oilcan use avocado oil

Preheat oven to 350F. Line a loaf pan with parchment paper and set aside.

In a large bowl, combine flaxmeal, baking soda, and salt.

In a small bowl, whisk together eggs, water, and olive oil.

Let batter sit for 2 minutes to allow it to thicken.

Pour batter into prepared loaf pan and bake in oven for 45 minutes, or until toothpick comes out clean.

Lift bread from pan by grabbing the edges of the parchment paper and let loaf cool for 30 minutes.
