A delicious and low carb recipe for Shepard’s Pie.

Ever since making my Easy Low Carb Pie Crust, I’ve been experimenting with a bunch of new recipes!
This crust is great for savoury recipes like this one or my Low Carb Taco Pie, as well as sweet recipes like my Low Carb Pumpkin Pie.
I love Shepard’s Pie because 1) it’s so easy to make, and 2) you get all your protein and veggies in one dish! It’s the perfect weeknight dinner for the family.
We all loved the buttery cauliflower topping on the pie, however, I think next time I’m going to experiment with sweet potato as a topping for something different. It will add more carbs, but it will add some nice flavour too.
Just because I tend to eat lower carb, doesn’t meant I don’t eat ZERO carb!! Carbs are very important for women and our hormones, so please don’t be afraid of them.
This Low Carb Shepard’s Pie is great for leftovers too! I froze some so I could have it for lunch and it tasted just as good.
Another option would be to use ground chicken instead of the beef!

- 1whole Easy Low Carb Pie Crust
- 1Tbsp olive oil
- 1whole carrotdiced
- 3whole celery stickschopped
- 1clove garlicminced
- 1/2cup yellow onionchopped
- 1pound ground beef
- 2Tbsp beef broth
- 1Tbsp tomato paste
- 1Tbsp red wine vinegar
- 1Tbsp Worcestershire sauce
- 1/4tsp sea salt
- 1/4tsp black pepper
- 1cup cheddar cheeseshredded
- 4cups raw cauliflowerchopped into florets
- 2Tbsp butter
- 1/4tsp sea salt
- 1/4tsp black pepper

Preheat oven to 400F. Prepare pie crust and bake in oven. While pie crust is baking, prepare filling and cauliflower topping.

Heat oil in a large frying pan. Add carrot, celery, garlic, and onion. Cook on medium for 2 - 3 minutes, until onions are opaque.

Add ground beef and continue to cook until beef is browned and cooked through, breaking up with a wooden spoon as it cooks.

Stir in the broth, tomato paste, vinegar, Worcestershire sauce, salt, and pepper

Once the pie crust is done, spoon the meat mixture into the pie crust. Top with shredded cheese.

Steam the cauliflower. Once tender, add to a food processor along with butter, salt, and pepper.

Top meat mixture with pureed cauliflower.

Bake in oven for 10 minutes.
